By Vestnik Kavkaza

In Moscow, with the support of the city Department of National Policy and Interregional Relations, the celebration of Navruz (Novruz) began with the preparation of sumalak. This tasty and healthy holiday dish restores physical strength and good spirits.

The process of preparing sumalak (or sumanak) is a true ritual that has not only a culinary component, but also a musical and dancing one. The ”bread pudding" is cooked for about 9 hours, thus, the tasting takes place the next day.

Immediately after preparation, sumalak is shared with relatives, friends, and neighbors. Sharing sumalak is like sharing happiness.
