In 2015, Dagestani bakers produced 209.6 thousand tons of grain production, which is 0.3% more than in 2014, the Ministry of Agriculture of the republic reported.
Up to 80% of them were made in small bakeries. "The rapid development of small bakery shops in urban and rural areas has led to a decrease in the capacity utilization of large enterprises. The capacities of the majority of the baking enterprises are loaded on 30%. Several of the baking enterprises are constantly working on expanding their assortment and improving the quality of products. This applies to small and medium-sized bakeries, which have been working on the principle of Western companies: open bakery shops," RIA Dagestan quoted a representative of the ministry as saying
